nestled in a hidden corner on the first floor of fahrenheit 88 mall in bukit bintang, the petite noodle joint mimicked the simplistic japanese decor of its sister franchises in japan, indonesia, thailand and hong kong. it took a bolder approach with the focus walls painted in my favorite hue of red that contrasted yet complimented the other grey and white walls as well as dark & light brown furniture. as the sun set, the last of the evening sunlight streamed in through the ceiling-high windows that faces the back roads of bukit bintang.

the compact menu was filled with the choices in the combination of either spicy/non-spicy broth and toppings of chashu, pork belly or ajitsuke tamago. in fact, if you're feeling hungry, why not all three? or you can even order the toppings (or their other offerings) as a side to be shared with others if variety is what you're looking for.

being the only diner at the restaurant meant that the bowl of goodness got to me really quickly. the broth was warm and i inhaled its fragrance when i tasted my first sip.

as the warm soup trickled down my throat, it sung a couple of the same notes as my favorite tonkotsu broth but on a milder, subtler tune. the stock almost had the similar sticky lipped richness and light creaminess in a flavorful disposition.. a lighter version, if you will but seasoned just nicely. the soup is cooked for five hours daily over high heat using the freshest ingredients and that it takes one whole chicken to make two bowls of soup to achieve that level of flavor intensity. plus, marutama boasts of no added preservatives nor msg.

the handmade noodles were fresh as it was coated lovingly by the thick broth. i've always liked my ramen's texture to be cooked el dente for that firm, springy bite with each chew but this was slightly overdone, thus making it a little softer than i'd like.one of my favorite ingredients in the bowl has got to be the understated and unassuming imported river bed seaweed from japan that gave another layer of flavor that somewhat cut through the richness of the stock. i would call it the secret (although not-that-secret) ingredient that made this bowl of noodles whole.

the slice of roast pork loin with its great lean to fat ratio was cooked to its tenderly satisfying texture. flavor-wise, pretty good but it didn't stand out as memorable.

and finally, a must have with every bowl of japanese ramen -- the ajitsuke tamago. very mild flavors of soy and mirin infused into the marinated soft boiled egg, done using almost textbook perfect techniques (although i've definitely tasted better ones). as i pierced the egg with my chopsticks to split it open, the runny yolk streamed some of its golden richness into the stock to accentuate the flavors.

don't miss out on the fried garlic flakes on the table and you can even have a second experience with that same bowl of ramen with the addition of their signature condiment. perhaps first half without and the second half with. ;)

the fried garlic flakes gave a slight earthy, sweetness mingled with a bitter undertone from the garlic itself to give a more robust punch of flavor with the occasional crunch of the fried flakes. don't forget to try it for yourself to figure out if you prefer it with or without.

[#protip] while you can't add more stock, you can always have an additional order of ramen (rm 3) if you would like extras to slurp up all that chicken stock with.

oh, and if you are wondering whether the green tea is refillable, it's a yes ;)

很喜欢这个拉面,里面有几条蛮大块的蟹柳,那种蟹柳不是那种很假的蟹柳,而是很有螃蟹质感还有味道的蟹柳。上面还有几片很薄的三文鱼,不过和汤头在一起的时候显得有一点失色了

最近忙于烘培,还不是这碗拉面,让我不得以要立刻和大家分享。这家拉面的位置蛮偏僻,和saisaki一样,在很角落旁。靠窗的桌位风景如画,但我指的不是平常那人山人海的金三角,而是住宅区,感觉就像自己在家吃碗面。看似简单,但味道非凡。拉面的汤头非常重要。这家用的是鸡汤底,所以喝起来没像猪骨熬出来的那么浓郁又油腻。我要求要微辣的汤头,但我觉得辣度不够,下次可以试看中辣。面比较硬,浸泡在汤里一段时刻后就会变得较软,但汤里头就会添加了面的碱水味。一片猪肩肉,非常软嫩,又不肥腻。海菜也很赞,嫌它太少了!最令我满怀欢喜的就是这颗塘心蛋。筷子一剖开,蛋黄即流。而且这蛋还用了酱油调味过,单吃就很满足了。蚝油炒菜。蔬菜很爽脆可口,有点咸,但可以接受。

看似简单,但味道非凡。
拉面的汤头非常重要。这家用的是鸡汤底,所以喝起来没像猪骨熬出来的那么浓郁又油腻。

比较硬,浸泡在汤里一段时刻后就会变得较软,但汤里头就会添加了面的碱水味。

本来今天和同事们“组成”的为食团要吃Sushi Zanmai,可是去到店前面看到很多人在前面排队。。我们这些上班族的吃饭时间是一个小时罢了,所以当然没有这些事件在那里慢慢排队吃饭的咯~~那么去哪里呢?还是吃回日本餐不过不是寿司了现在是日本拉面。在这里不用排队就可以吃了。大伙们坐下Order了还不到十分钟面就开始上桌了,超快的服务速度。这里的拉面特别之处,在那蛋里。。外面是全熟的蛋不过蛋黄却是在半熟的情况,很特别。这里的叉烧也不是省油的,叉烧的香味在嘴里翻滚中~~回味无穷。汤就还可以,不是很浓的汤味然后有一层油在上面喝起来嘴巴油油的。。感觉不是太好。面条的口感不错,瞒有弹性的不过看起来有点像云吞面。。如果把面换去比较厚的日本面条或许会更加好。一碗面大概十八零吉左右,不会太贵当然也不算便宜,可是值得一试。

What makes this ramen irresistibly delicious is its thick chicken soup. The soup is cooked for 5 hours until the chicken meat and bones are dissolved into the soup! According to the owner, a bowl of soup is equal to half a chicken! No wonder the taste is so rich and delicious!

This is another highly recommended side dish. It is Japanese Char Siew called Kakuni. From the picture, you can see that the pork has equal distribution of meat and fat, which makes the pork tastes soft and tender.

This ramen is the best ramen I have ever tried!

We added some half-boiled seasoned egg for good measure; the result was a supremely hearty, comforting bowl of noodles that might seem ideal for nursing a broken heart.

Situated in Fahrenheit 8 on the first floor, this cute little Ramen joint looks and feels authentic. You'll see Japanese people dining here too, which is always a good sign. We pored over the menu for a little while. There are many options, so there's bound to be something for everyone. I've ordered the Spicy Ajitsuke Tamago Ramen (RM20) which comes with one marinated soft boiled egg, one piece of charsiu, river bed seaweed and spring onions.

At first glance, you wouldn't think it's spicy at all, but the broth definitely packs quite a bit of heat. The Chicken broth is thick, and rich but definitely not as cloying as the usual Tonkotsu broth. Salt level was perfect. I accidentally finished the Char Siu too fast, so we ordered a side of 3 Char Siu (RM6). They were really addictive. So If you love pork, make sure you order the Ramen with multiple pieces of Char Siu (3 would be perfect). There were plenty of noodles too, and they were springy, bouncy, perfect marriage with the broth.

But the star of the dish? Definitely the Ajitsuke Tamago (marinated soft boiled egg). Perfectly runny in the centre, and well marinated. It's rare to taste even the soy and mirin in the yolk itself, and they managed to achieve it. Big thumbs up!

Service is really friendly and attentive, you get bottomless green tea (hot/cold) and they will always fill it up for you without asking. I'll be going there again pretty soon!

Besides ramen, Marutama Ramen also serves some small side dishes. like grilled pork belley, white carrots, japanese omelette etc. Gyoza @ RM10.00We ordered this gyoza for sharing. There are 6 pieces and 2 of us having hard time to finish it. Topped with parsley and some spring onions, the gyoza is not fried at all but just steamed cooked. The skin is smooth and not thick. Inside is stuff with minced pork and chinese chives. It comes with some chili oil soy sauce. I was nearly choked with the chi

We ordered this gyoza for sharing. There are 6 pieces and 2 of us having hard time to finish it. Topped with parsley and some spring onions, the gyoza is not fried at all but just steamed cooked. The skin is smooth and not thick. Inside is stuff with minced pork and chinese chives. It comes with some chili oil soy sauce. I was nearly choked with the chilli oil. The taste is just average because it has a weird taste in it that i hardly explain.

The char siew rice came in a smaller bowl but was filled full of chunks of char siew, marinated carrots, and topped with spring onions and brown sesame. The char siew is very tender and taste good. The japanese rice is well cooked each of it is so fat and soft. The marinated carrot is little sourish taste and refreshing. Overall it is actually worth for the price.

The most basic char siew ramen. It comes with chunks of seaweed, spring onions, and a sliced of char siew. Surprisingly the soup broth is actually chicken soup, which had been boiling for hours until thick and light yellowish broth. The taste of the soup is very rich in taste but i think it will be tastier if using the pork broth. The ramen noodle is silky thin and smooth. The char siew is quite tasty with less fats and the meat was tender too.
I felt it's quite pricey for this small portion of ramen, should have given 2 slice of char siew for that pricing.

Presenting you the house specialty - Marutama Ra-men; ramen in chicken broth with Char Siu slices, seaweed, spring onion and 3/4 boiled egg.

The broth at Marutama was very flavourful, but it's a shame it's not pork broth
Char Siu was tender and fat as well. Among all ingredients, I loved the egg the most!

That's not all, if you want your ramen/broth to even more flavourful, there’s free flow of deep fried sliced garlic and freshly roasted sesame seeds provided.

Recently I decided to indulge in the recent "trend" of ramen. Recently I decided to indulge in the recent "trend" of ramen. Many places have popped up recently, but this day I decided to try one of the earlier birds.

Prices were lower, but you also get less.

Number one transgression that I cannot forgive - they use chicken soup instead of pork (it is the same soup base for all their ramen). It does not have the same taste and does not achieve the same effect at all. The soup was as thick as how pork-based soup should be, but lacked all character beyond that "maggi chicken soup" taste.

I would probably try overlooking this transgression (but probably still fail) if at least they made this choice because they opt not to serve any pork at all; but this is not the case. Most ramen came with some sort of pork - and mine was a single slice of pork. They had options for more pork for a higher price, but that would make it match the price of other better ramen places which served killer soup instead of the weak stuff at Marutama.

The onsen egg was decent but not really exciting - the textures were about right (firm outside, semi-runny yolk) but I guess the chicken soup spoiled everything.

Twenty-ringgit maggi mee. Gosh. Never again.
