The rump is particularly a lean cut with moderate toughness. Thanks to it's lack of fat and marbling, it is usually cooked with methods such as roasting and grilling. The rump steak served here was tough to chew but the meat retains its moisture and juiciness. The steak is served on a thick bed of mashed potato and red wine marinated sauce. The mashed potato could use a little extra butter to make it smoother though.
