Ingredients|材料:200g flat rice noodles (hor fun,strands loosened) | 河粉200克(弄松), 5 thin slices ginger | 姜片5片、70g bittergourd (sliced thinly) | 苦瓜70克(切薄片), 50g chicken fillet (thinly sliced) | 鸡柳50克(切薄片), 4 shelled prawns| 去壳虾仁4只, 1 tsp chopped fermented black beans(tau si) | 黑豆豉(剁碎)1茶匙, 1 tsp minced garlic | 蒜茸1茶匙, 1 tsp soya beans paste (taucheo,finely chopped) | 豆酱1茶匙, 400ml water | 清水400毫升

Seasoning |调味料:2 tbsp light soy sauce |酱油汤匙, dash of pepper |胡椒粉少许, a dash of chicken stock powder |鸡粉少许

Sauce | 酱汁:2 tbsp light soy sauce | 酱油2汤匙, 1 tbsp scallop oyster sauce | 干贝鲍鱼酱1汤匙, 1 tsp chicken stock powder | 鸡粉1茶匙, dash of sugar or to taste | 白糖少许, dash of pepper | 胡椒粉少许

Thickening | 勾芡:1 tbsp tapioca flour (mixed with 2 tbsp water) | 薯粉1汤匙+2汤匙清水混合

Method | 做法:
1. Heat a nonstick wok with a little oil.Put in hor fun, garlic, ginger and seasoning. Toss and fry till well, dish out.
以不粘锅热少许油,加入河粉、蒜头、姜及调味料,炒均后盛出。

2. Add a little oil to the wok and put in bittergourd,fermented black beans and soya beans paste. Fry well then pour in water and add sauce ingredients.
加少许油入锅,然后放入苦瓜、黑豆豉及豆酱,炒均后加入清水和酱汁材料.

3. Add in chicken fillet and prawns to mix. Stir-fry briefly.
加入鸡肉和虾肉,炒一会。

4. Put back prefried hor fun to the wok. Fry well to combine then adjust with thickening solution.
加入炒河粉,炒均后勾芡即可盛出。
