My favourite order is for the deep fried fish head version of the noodle. I find that the fried version although quite cumbersome due to the many bones in the fish, still tasted the best. Somehow the fried slices adds extra taste to the soup. Other ingredients in the bowl were tomatoes which gave it a nice tangy taste, preserved vegetables, generous amount of fried shallots and spring onions, add to this a fair bit of Chinese rice wine and evaporated milk and you have the ultimate blend - wouldn't enjoy it any other way. The soup is usually finished up to the very last drop.
