Wow! The plate is very beautiful. If you look at it seriously, you can find that there are two butterflies made by carrot on the sashimi. It serves with salmon, tuna, halibut and Yuzu Rice Espouma. The sashimi is really fresh and tender, and it's great to go with Sake. Yuzu Rice Espouma is made by rice milk emulsion, yuzu sauce, and hazelnut oil.  Soft white fish wrapped with crunchy Kataiffi, then topped with Alfalfa sprouts and Parmesan cheese powder. The green OOBA sauce is composed of Japanese Basil leaves, potato, olive oil, scallop mousse and lemon juice. The sauce can enhance the tastes of the fish, let it be more flavourful and fresh! I like it!
