Sanma shojiyaki is a popular fish for japanese cuisine. The fish was somehow lightly baked or grilled with little seasoning. I think only a little bit of sea salt is added for the seasoning. The fish was a bit dry and i fins that the meat was quite tough. Even the skin of the fish was also tough. I suspect it was because it is served at the buffet line, the wuality of this fish can't be fully maximize.
