This is called aloo paratha, which is real Indian roti paratha (not the Malaysianized roti canai or pratha), stuffed with potatoes. The roti the dense and springy, at the same time moist and fluffy. The potatoes are okay, but would be better if added with more Indian spices. Goes very well with the bean vegetables, which are rich and earthy, with lightly sour and thick-textured curd.
