This is quite a unique concept restaurant, with a fusion of italian and japanese style cooking and ingredients. The dish I had this time was more to japanese style and ingredients. The unagi is lighlty seared ad bathed with a thick sticky version of soya sauce. It was sweet and slightly salty and if you mix it with the egg, the sauce would stick to the rice making every spoonful like a sushi roll except there is no seaweed to hold it all together.
