Preparation /准备工作 1. Chop lobster into halves and crack both claws slightly. Rinse and set aside. 龙虾各斩一半,轻轻敲碎龙虾钳。洗净备用。
2. Peel and chop garlic and black garlic separately. 蒜头和黑蒜去皮,分别切碎。
Method/做法 1. Combine Ingredients B (except oil) in a metal mixing bowl to form the black garlic paste. 把材料B放入铁碗里拌匀(除了食油)即成黑蒜酱。
2. Heat oil in a wok till it is about 150°C. Pour the heated oil over the black garlic paste. Carefully mix well and set aside. 油入锅,烧热至约150°C,然后把热油倒在黑蒜酱里。拌匀备用。
3. Arrange lobster, with flesh facing up, on a steaming plate. Spoon Black Garlic Sauce on the flesh of the lobster. 龙虾放在大碟子里。有肉的部分向上。把拌好的黑蒜酱淋在龙虾上面。
4. Steam for 10 minutes till cooked. When done, drizzle Seasoned Soya Sauce for Seafood over, add Garnish, and serve. 放入蒸锅蒸10分钟至熟。然后淋上蒸鱼豉油即可。
