通常海鲜都是以简单的材料和调味料来准备的,这样才能吃出海鲜的鲜味。这道绍典明虾食谱用了中餐料理常用的绍典酒来做这道菜。
Ingredient and Portion
300g King prawns / 300克明虾
1 tbsp chopped garlic / 1大匙蒜茸
1 tbsp chopped spring onion / 1大匙青葱粒/葱花
80ml "Shaoxing" wine / 80毫升绍兴酒
Seasoning
1/4 tsp salt / 1/4小匙盐
1/2 tsp sugar / 1/2小匙糖
Method
1. Rinse prawns and drained, deep-fry in hot oil over high heat until cooked and golden brown, dish out, drain well.
明虾洗净后沥干水分,放入热油里以大火炸熟呈金黄色,捞起,沥除油分。

2. Leave 1 tbsp hot oil in a preheated wok to saute garlic and spring onion until fragrant. Add the prawns and seasoning, stir-fry briskly until well combined.
镬里留1大匙热油,加入蒜茸和葱粒拌炒香,加入明虾和调味料翻炒片刻。

3. Add "Shaoxing" wine, stirring constantly over high heat until the sauce is thick. Serve hot.
注入绍兴酒煮,以大火快速兜炒片刻至收汁,即可上桌。
