咸菜,又名醃菜,是主要用食盐醃製保存并调味的蔬菜,可以用来直接佐餐,或者作为烹调的原料。酸酸地好开胃哦!

Ingredient and Portion
Ingredients A
2kg large mustard green / 大芥菜2公斤
100g coarse salt / 粗盐100克

Ingredients B (Brine) / 材料B(盐水)
4 litres water / 清水4公升
40g salt / 盐40克
2 tbsp sugar / 糖2汤匙

Ingredients C (Mixed well) / 材料C(拌匀)
1 tbsp rice flour / 粘米粉 1汤匙
3 tbsp water / 清水 3汤匙
Method
Preparation
1. Sprinkle salt over mustard green, and rub all over leaves and stems.
将盐撒在大芥菜上,均匀抹遍叶和茎。

2.Dry under direct sunlight for about 6 hours till water has evaporated.
日晒6小时至水分蒸发。

Method / 步骤:
1. Combine Ingredients B in a pot and bring to a boil. Add Ingredients C and stir well. Leave aside to cool.
将材料B放入锅中煮沸。加入材料C拌匀,搁旁待冷。

2. Squeeze out water from mustard green and put into a glass jar.
将水分挤干后放入玻璃罐内。

3. Scoop in Brine to fully cover the mustard green.
舀入盐水至淹过大芥菜。

4. Cover with lid and leave in a cool place for 8 days.
加盖,放在阴凉处8天即可。

5. Remove and squeeze out water, keep in a dry container. Keep in the fridge up to 3 months.
取出,挤干水分后存入干净的容器内。放入冰箱冷藏可达3个月。
Tips
Large mustard green may be substituted with long mustard green.

大芥菜可用长芥菜代替。
