Ingredient and Portion
Ingredients A
2kg unripe green mangoes / 生青芒果2公斤
500g coarse salt / 粗盐500克
Some water (to cover mangoes) / 清水适量(淹过芒果表面)

Ingredient B
500g castor sugar / 糖 500克
Method
Preparation

1. Wash mangoes and put into a large glass jar.
将芒果洗净,放入大玻璃罐内。

2. Add salt and water to cover mangoes. Stir well until salt dissolves.
加入盐和清水,拌至盐溶化。

3. Cover with a lid and leave in a cool place for 4-5 days.
加盖,放在阴凉处4-5天。

Method / 步骤:
1. Remove mangoes from the glass jar, peel off skin and soak in water for 10 minutes. Rinse well with water again and drain well.
将芒果倒出,去皮后泡清水10分钟,冲洗干净,然后沥干。

2. Cut mango in half lengthwise and remove seed. Then cut mango flesh lengthwise into thick slices. Lightly squeeze out excessive water, spread mango pieces to air-dry.
将芒果打直切半,去籽后打直切厚片。轻轻挤出多余水分,将芒果片排好风干。

3. Put mango pieces in a large glass bowl, add sugar and stir well.
将芒果片放入大玻璃碗内,加入糖拌匀。

4. Stir constantly until sugar is completely dissolved. Cover and leave in a cool place for 2 days before serving.
不时搅动芒果片至糖完全溶化。加盖,放在阴凉处2天,即可享用。
Tips
It’s recommended to choose small, round mangoes.

建议选用小粒的圆芒果。
