4 portion red snapper / 红鲷鱼 4片
50ml corn oil / 粟米油 50毫升
Mango and Tamarind Salsa / 芒果沙沙酱
60g tamarind / 亚参 60克
100ml water / 清水 100毫升
1 no mango fruit(dice) / 芒果 1粒(切粒)
1⁄2 no Pomegranate / 红石榴 1⁄2粒
50g red onion(small dice) / 红葱头 50克(剁碎)
2 nos chili padi (chopped) / 指天椒 2条(剁碎)
Salt and sugar to taste / 少许盐及糖调味
2 sprig coriander leaf / 洋芫荽 2束
Pilaf Rice / 香料饭
100g rice / 米100克
200ml chicken stock / 鸡汤 200毫升
50g butter / 牛油 50克
80g shallot(dice) / 小葱头 80克(剁碎)
2 clove garlic(chopped) / 蒜 2瓣(剁碎)
2 sprig fresh oregano / 鲜迷迭香 2束
Method
To Prepare Pilaf Rice / 香料饭做法
1. Sauté onion, oregano and garlic with butter in a large sauce pan.
锅内热油,爆香葱、迷迭香及蒜片至香。

2. Add in rice, cooked for a few minutes until aromatic. Pour in chicken stock, stir consistently until boiled. Seasoned to taste. (pic 1)
加入米炒数分钟至香。注入鸡汤及调味料,拌匀煮至滚。(图1)

3. Transfer to baking dish and cover with lid/foil; baked in oven at 180℃ for 30-45 minutes. Keep warm. (pic 2)
把饭移入烤盘内,用锡箔纸包好,放入预热的烤炉内以180℃烤约30-45分钟。(图2)

To Prepare Snapper/ 红鲷鱼做法
Fillet and portion cut the red snapper, marinate with salt and pepper. Pan fried till golden. (pic 3)
将鱼洗净切大块,用少许盐及胡椒粉涂抹腌好。然后以少许油煎熟备用。(图3)

To Prepare the Salsa/沙沙酱做法
1. Combine tamarind and water in a mixing bowl, strain and keep the juice. Bring to boil and correct seasoning with sugar and salt. allow cooling.
在一个碗内将亚参汁及清水混合,过滤去渣备后,放入平底锅内煮至滚,少许糖及盐调味。待冷备用。

2. In a big bowl, mix mango cubes, pomegranate, red onion dice and chopped chili padi, add in tamarind juice and mix well.(pic 4)
在一个深碗内将芒果、石榴、红葱茸及指天椒粒捞匀,加入亚参汁搅拌好。(图4)

3. Served the baked rice with red snapper and fruit salsa.
将饭盛碟,拌鱼片及水果沙沙酱一起享用
