650 g boneless lamb / 不带骨羊肉650克
3-4 Tbsps cooking oil / 食油3-4汤匙
2 Tbsps ghee / Ghee油2汤匙
2 big onions(sliced) / 大葱2粒(切片)
2 knotted pandan leaves / 班兰叶2片(打结)
750 ml water / 清水750毫升
1 large potato(cut into wedges) / 大马铃薯1粒(滚刀切)
2 tomatoes(wedged) / 番茄(切瓣)
100 ml thick coconut milk / 椰浆100毫升
salt to taste / 盐适量

Condiments / 腌料
1/4 cup yoghurt / 优葛1/4杯
50g kurma curry powder / 古玛咖哩粉50克
1/2 tbsp meat curry powder / 肉类咖哩粉1/2汤匙

Spices Ingredients / 香料
1 star anise / 八角1粒
3cm cinnamon stick / 桂皮3公分
8 cardamon pods / 柚籽8粒
4 pcs cloves / 丁香4粒
2 stalks red chilly (sliced lengthwise) / 红辣椒2条 (切长丝)

Ground Ingredients / 研磨香料
2.5 cm ginger / 姜2.5公分
2 cloves garlic / 蒜头2瓣
2 shallots / 葱头2粒
2 stalks green chili (sliced lengthwise) / 青辣椒2条(切长条)
5 pieces buah keras / 石古仔5粒
60 ml water / 清水60毫升
Method
1. Finely ground all the ground ingredients into paste.(pic 1-2)
将所有研磨香料研磨至细,备用。(图1-2)

2. Marinate lamb with all condiments.(pic 3-4)
将羊肉以腌料腌妥。(图3-4)

3. Heat oil & ghee in a wok, saute spices for a few seconds, then add onions and sauté until light browned.(pic 5)
起锅热油和Ghee油,加入香料 炒数分钟,放入大葱炒至微黄。(图5)

4. Add pandan leaves and marinated lamb with all the ground ingredients; stir-fry till fragrant.(pic 6-7)
加入班兰叶、腌羊肉和研磨香料一起炒至香。(图6-7)

5. Pour in water and simmer for 35 minutes or until meat is tender. (pic 8)
注入清水,焖煮35分钟至肉软。

6. Lastly add potatoes and cook until tender, before adding coconut milk and tomatoes.(pic 8)
最后加入马铃薯,煮至软身后才加入番茄和椰浆。(图8)

7. Season to taste with salt and add more water if prefer a thinner gravy lamb kurma.
以盐调味,若觉得太浓可加水。
