Ingredients B 1 1/4 tbsp alkaline water / 枧水 1 1/4汤匙 1 tsp oil / 油 1茶匙 1/2 tsp salt / 盐 1/2茶匙
For Wrapping some dried bamboo leaf and straw (soaked till soften and pat-dried) / 干粽叶和咸水草 适量(浸软,抹干)
Method
1.Soak glutinous rice for at least 4 hours and rinse. Drain rice completely and mix well with Ingredients B. 糯米用清水浸泡至少4小时,洗净,充分沥干糯米,并加入材料B混合均匀。
2.Fold 1 piece of bamboo leaf into a cone, fill in glutinous rice and press tight. Wrap into pyramid and tie with straw. 将粽叶折成圆锥状,填入糯米后压紧,折成粽子状,并用咸水草扎好。
3.Put the dumpling into boiling water, boil over medium heat for at least 4 1/2 hours (water must cover dumplings at all time when boiling), and cover the lid. 将粽子放进沸水中,上盖,用中火煮至少 4 1/2小时(确保水位维持在粽子之上)。
4.Remove and hang up to dry. Serve with Kaya. 取出、吊起,待水份蒸发后,即可配上加央享用。
