Try some new ways to cook the omelette! Braised them with soy sauce because this would enhance further the taste of the egg and making it taste even better!
2 tbsp spicy soy bean paste/辣豆瓣酱2汤匙 1 tbsp sugar/糖1汤匙 1tbsp apple cider/醋(苹果)1汤匙 1⁄2 bowl water/水1⁄4碗 1 tsp sesame oil/麻油1茶匙 1⁄2 tsp chicken powder/鸡精粉1⁄2茶匙 some starch for thickening/粟粉水(勾芡)
Method
1. Chopped water chestnut and set aside. 将马蹄去皮切碎备用。
2. Mixes ingredients A; heat wok with 3 tbsp oil, pour in egg mixture in 2 intervals and deep fry until crispy; drain and cut into pieces. 将A料拌匀,然后烧热镬,下3汤匙油,分2次倒入,把蛋液煎炸至蛋酥脆时捞出滤油,并切成块状,摆盘备用。
3. Heat up 2 tbsp oil, saute chopped garlic and ginger until crispy, drain and set aside. Add minced meat and chopped water chestnut to the same wok and stir-fry. 以2汤匙油爆香蒜茸及姜茸至呈金黄色香脆,盛起滤油,放入肉碎及马蹄碎拌炒均匀。
4. Toss in seasoning, thicken with starch and pour sauce over fried egg pieces, sprinkle with chopped spring onion, garlic and ginger crisp, done. 加入调味料略烧一下后,以粟粉水勾芡,然后盛起淋在炸蛋包上,并撒入葱花、爆香蒜茸及姜茸酥即可。
