This dried shrimp soup with chinese mushroom and winter melon soup suitable for children who are lacking calcium, malnutrition, or are slow in body development; and women suffering from osteoporosis.

这道虾皮冬瓜花菇煲瘦肉汤适合小儿妇女缺钙、骨质疏松、营养缺乏、发育缓慢、养骨补钙。

Ingredient and Portion
2 taels (approx 75g) dried shrimp / 虾皮(虾米)2两(约75克)
2 taels (approx 75g) Chinese mushroom / 花菇 2两(约75克)
1 catty (approx 600g) winter melon / 冬瓜 1斤(约600克)
3 pieces ginger / 生姜 3片
½ catty (approx 300g) lean meat / 猪瘦肉 半斤(约300克)
2500ml water / 清水 2500毫升
coarse salt to taste / 粗盐适量
Method
1. Remove seeds from winter melon and retain its skin. Wash it clean and cut into big pieces.
冬瓜去囊籽、留皮且刷洗干净,切大块备用。

2. Soak Chinese mushroom until soft. Rinse and squeeze dry.
花菇浸透,洗净挤干备用。

3. Scald lean meat and rinse. Set aside. Rinse remaining Ingredients and set aside.
猪肉汆烫过后,洗净备用。其他材料洗净备用。

4. Put water and all Ingredients in a pot. Bring to a boil over high heat. Turn to low heat and simmer for 3 hours. Turn off heat and season with salt.
锅中放入所有材料及水,大火煲至水滚,转文火煲3小时,熄火放入盐调味即可。

This cheap ingredient is rich in calcium and nutritious. It can also improve appetite and expel phlegm.
虾皮即是虾米,也就是毛虾干,不单单只是虾子的皮而已,所以还是虾子。虾皮的营养丰富,故又被称为“钙的仓库”,是价廉物美的补钙佳品。据记载,虾皮还具有开胃、化痰等功效。
