The Making of Vegetarian Duck Meat /素鸭香片制作 1. Spread one piece of bean curd sheet flat. Fold the left side to the centre, and fold the right side to centre as well. 把一片腐皮摊开,左右往中间折。
2. After that, fold the bean curd sheet thrice from bottom to the top. 再从下向上折三折。
3. Fold the bean curd sheet from top to the centre, and fold the bottom part up, forming a rectangular bean curd sheet. 最后再从上折下,然后从下折上盖着,形成长方形。
4. Seal the bean curd sheet with toothpicks. Repeat with the rest. 用牙签固定,封好。重复完成其余腐皮。
Method / 步骤:
1. Combine sugar with fermented bean curd, and add tapioca flour. 糖和腐乳先拌匀。加入木薯粉拌匀。
2. Add five spice powder and sesame oil. Pour in water and mix until well combined. 加入五香粉和麻油,然后倒入清水拌匀。
3. Dip vegetarian duck meat into the mixed seasonings. Marinate with the seasonings and remove to drain. Repeat with the rest. 把制作好的素鸭香片浸入调味料里 (沾湿即可),取出稍微沥干。
4. Steam the vegetarian duck meat over high heat for 5 minutes. 将素鸭香片放入锅内,以大火蒸5分钟。
5. Leave to cool and chill in the fridge before use. 蒸好后待凉,未烹煮前先收藏于冰箱。
6. To cook, deep-fry the vegetarian duck meat in hot oil until golden brown and crispy. Remove and drain. Cut into pieces and serve. 烹煮时,把蒸好的素鸭片放入热油内炸至金黄香脆,取出沥干,切片即可。
