The dessert comes just in time especially after some fiery and sour indulgence of Thai cuisine earlier on. This pinkish ball dessert is named as Thap Thim Krob in Thai or rather widely known as Red Ruby dessert. I would always call for this round up after every meal when it comes to dining at Thai restaurant. The rubies are not only delightful to the eyes, but also to the taste bud as they are really crunchy and chewy on the pinkish layer outside. It is actually made of water chestnut that are lightly boiled in a hot bath of tapioca mixture before drenched quickly in some edible colour. I suppose this is easier said than done
There are also some fragrant jackfruit strips to add some spice to this toothsome dessert
