Prawn cakes outside might be overly oily, but you can control the oil and ingredients when you do it yourself! Get this recipe.

这道小吃,做法简单,油而不腻的口感,男女老少都会非常喜欢。食用时可搭配自己喜欢的酱料,这样会更棒!

Ingredients | 材料:150g plain flour / 面粉 150克, 1 tbsp corn flour / 粟粉 1大匙, 1 tbsp rice flour / 粘米粉 1大匙, 1/2 tsp baking powder / 发粉 1/2小匙, 1/2 tsp bicarbonate of soda / 苏打粉 1/2小匙, 50g shelled prawns (chopped) / 虾仁 50克(剁碎), 100g shredded sweet turnip / 沙葛丝 100克, 50g Chinese chive (sectioned) / 韭菜 50克(切段)

Side ingredients | 配料:100g medium-sized prawns / 中虾 100克

Seasoning | 调味料:1/2 tsp salt / 盐 1/2小匙, 1/2 tsp caster sugar / 砂糖 1/2小匙, 1/2 tsp pepper / 胡椒粉 1/2小匙, 1 tsp chicken seasoning powder / 鸡精粉 1小匙, 1 egg / 鸡蛋 1個, 200ml water / 清水 200毫升, 3 tbsp cooking oil / 食油 3大匙

Method | 做法:
1. Mix all ingredients and seasoning into batter.
將所有材料加入调味料拌成面糊状。

2. Heat up cooking oil for deep-frying, put in a stainless steel or iron ladle in hot oil to preheat. Remove and drain the oil. Add some batter in the ladle, top with a prawn.
烧热一镬油,把一個铁勺泡入热油裡烧热,取出,加入適量面糊,表面加上 一只中虾。

3. Deep-fry in hot oil over high heat until the prawn cake is float, fried until golden brown. Dish out and drain, serve.
放入热油中以大火炸至浮起及金黃香脆,捞起,沥除油份,即可。
