鳕鱼本身已经十分鲜甜美味了,不过要如何让鳕鱼更加鲜呢?原来加入五香粉会更加美味,蒸出来的鱼肉会更加滑嫩。

400g cod fish belly / 银鳕鱼腩 400克
1 stalk spring onion (cut blocks) / 青葱1根(切段)
3 slices ginger / 姜 3片
300g soy bean powder / 黄豆粉 300克
Seasoning
1 tsp salt / 盐 1茶匙
1 tsp 5 spiced powder / 五香粉 1茶匙
1⁄2 tsp pepper / 胡椒粉 1⁄2茶匙
Method
1. Scale fish, clean, wash and pat dry.(pic 1-2)
把鳕鱼去鳞洗净抹干水份备用。(图1-2)

2. Stir-fry soy bean powder without oil in a heated dry wok until fragrant.Toss in seasoning ingredients and then dish out.(pic 3)
热锅,用小火免油,将黄豆粉炒香,加入调味料炒匀熄火捞起备用。(图3)

3. Steam fish in steamer with spring onion and ginger slices for 5 minutes.(pic 4)
烧热蒸锅;将鳕鱼与青葱及姜片,放入锅内蒸5分钟,熄火。(图4)

4. Pour away steamed fish gravy, place fish on serving plate.
把蒸鱼的汤汁倒干只取鱼肉摆盘上碟即可。

5. Sprinkle fried soy bean crumbs on top of fish to serve.(pic 5)
食用时把炒香的豆酥倒在鱼肉上。 (图5)
