Ingredient and Portion
400g roasted pig's trotter (cut into pieces) / 400克 烧猪手(剁块)
500g radish (peel and cut into pieces) / 500克 白萝卜(削皮,切角)
60g dried oyster (soaked) / 60克 蚝豉(温水泡软)
150g fried bean curd in stick / 150克炸 豆干条
3 ginger slices / 3片 生姜
1 tbsp chopped garlic / 1大匙 蒜茸
some chopped spring onion / 少许葱花
800ml water / 800毫升清水
Seasoning
1 tbsp oyster sauce / 1大匙 蚝油
1/2 tbsp light soy sauce / 1/2大匙 酱油
1 tsp sugar / 1小匙 糖
1/2 tsp peppercorns (crushed) / 1/2大匙 胡椒粒(拍碎)
1 tsp dark soy sauce / 1 小匙 黑酱油/老抽
Method
1. Heat 1 tbsp cooking oil in wok to saut6 ginger, garlic and dried oysters over low heat until fragrant, stir in roasted pig's trotter, radish and seasoning.
烧热1大匙食油,以慢火爆香姜片、蒜茸和蚝豉,加入烧猪手、 白萝卜及调味料,改大火翻炒片刻。

2. Add water, and bring to boil, cover up, reduce to medium heat, allow to simmer for 45 minutes, until sauce almost absorbed. Add the bean curds, stir well. Dish up, sprinkle with spring onion. Serve hot.
注入清水,煮沸。盖上,改用中火炯煮45分钟至收汁,然后放 入豆干拌炒均匀,盛起,撒上葱花,即可。
