What I love most about this dish? Well, I'm love eggs and I love them best when poached! Break it open and let its yolky lava loose upon the noodles, almost ilke an olio base for the noodles that also serves as a paste to keep all the little bits of ingredients together. Toss in some chilli flakes and - BAM - you've got yourself a spicy-silky-savoury mix that is truly Malaysian.

Kin Kin is said to be the father of chilli pan me - there was no such thing before they created it! Comparing against its competitors, they have a smaller serving size, but compensates for it with super fresh and silky noodles that just makes so much of a difference to the experience.

The right amount of ingredients also creates a balance between salty, sweet, and savoury flavors, and rich, smooth, and crunchy textures. A word of caution - be modest with the chilli flakes even if you're a big-time spicy food junkie!
