A foreigner friend of mine once said (upon hearing about fish head noodles) that only the Chinese would eat every single part of every single animal, including the head of a fish. I can understand why it sounded disgusting, but the reality couldn't be further from it!The meat was soft and rich, and the soup was milky, sourish, and sweet.
