Ingredient and Portion
Main:
200h Yam / 芋头200克
5 Chili Padi(smashed) / 指天椒5条(拍烂)
2stalks curry leaves / 咖哩叶2束
1 tbsp butter / 牛油1汤匙
1 tbsp sesame oil / 麻油1汤匙


Batter:
125g self raising flour / 自发面粉125克
1 tbsp rice flour / 粘米粉1汤匙
½ tsp salt / 盐½茶匙
½ tsp pepper / 胡椒粉½茶匙
1 tsp sugar / 白糖1茶匙
½ tsp chilli powder / 辣椒粉½茶匙
100ml water / 清水100毫升


Sauce:
150ml evaporated milk / 淡奶150毫升
½ tsp salt / 盐½茶匙
1 tsp sugar / 白糖1茶匙
½ tsp chicken stock powder / 鸡粉½茶匙
Method
1. Cut yam into thick strips.
芋头切粗条备用;

2. Combine all batter ingredients together. Stir to dissolve.
把面糊材料混合,搅拌至糖溶解;

3. Add in yam strips to mix.
加入芋条搅拌均匀;

4. Heat oil in a wok and deep-fry yam until golden brown.
起锅热油,把芋条炸至金黄色;

5. Heat sesame oil and butter in a wok. Saute curry leaves and chilli padi until aromatic.
另外起锅热麻油和牛油,加入咖哩叶和指天椒,炒至香;

6. Add in sauce ingredients and bring to a boil. Put in yam pieces and toss to mix until sauce is creamy.
加入酱汁材料,煮至滚后加入炸芋条,搅拌至汁稠即可盛出。
