Whoopie Pie were created by Lancaster’s Amishmade. It is made of two soft cookies sandwiched with a delicious filling.This Whoopie Pie add in wolfberry grounded into the pie ingredient and bake.

无比派(奶油馅夹心饼)是美国阿米许人的传统甜点,属于美式小点心。它的口感是介于蛋糕和软曲奇之间,在中间会放入奶油霜馅料。这个枸杞无比派是在软曲奇里加入了枸杞粉再拿去烘的。
Ingredient and Portion
50g butter / 50克牛油
50g caster sugar / 50克细砂糖
40g beaten egg / 40克鸡蛋
1/4 tsp vanilla essence / 1/4小匙香草精
120g plain flour / 120克普通面粉
2g bicarbonate of soda / 2克苏打粉
1g baking powder / 1克发粉
25g wolfberries (grounded) / 25克枸杞(搅碎)
90g yogurt / 90克酸奶

Filling / 馅料:
100g butter / 100克牛油
100g icing sugar / 100克糖粉
Method
1. Preheat oven to 180℃;line baking tray with baking paper.
预热烤箱180℃;准备烤盘,铺上油纸,备用。

2. Place the butter and sugar in an electric mixer and beat until mixture is pale and creamy. Add egg and vanilla and beat till well combined.
将牛油和砂糖放入搅拌机,搅拌至松白;加入鸡蛋和香草精,搅拌均匀。

3. Sift the flour, soda and baking powder together. Fold into butter mixture together with grounded wolfberry.
将面粉、苏打粉和发粉过筛,与枸杞碎一起拌入牛油混合物中。

4. Add in yogurt, stir until well combined.
加入酸奶,搅拌均匀成面糊。

5. Spoon batter into a piping bag fitted with plain nozzle and pipe S shapes onto prepared tray, spacing evenly.
挤花袋配入圆形花嘴,装入面糊,在烤盘上挤出S形面糊,间距均匀。

6. Bake in oven for 8-10 minutes or until cakes are springy to the touch. Remove from oven and allow to cool completely on a wire rack.
盛入烤箱烘约8-10分钟,或直到蛋糕有弹性的触觉;从烤箱取出,置于网架上,待冷却。


To make filling / 馅料做法
Beat butter and icing sugar until light and fluffy.
将牛油和糖粉打发至松白。


To assemble / 装饰法
Place the whoopie flat side up. Pipe the desired amount of filling onto one, then sandwich with another whoopie, flat side down. Repeat till you've used up all the whoopies.
将一片无比蛋糕,底部向上,挤入适量馅料, 叠上一片无比蛋糕,夹好,洒上可可粉;重复以上步骤直到完成所有无比蛋糕。
