Ingredient and Portion
Ingredients / 材料:
300g wild betel leaf (Daun Kaduk) / 山栳叶 300克
200g sweet potato / 番薯 200克
200g shelled prawn / 去壳虾仁 200克
20g dried shrimp / 虾米 20克


Curry / 咖喱酱:
200g spice paste / 香料糊 200克
1 tbsp Belacan powder / 拉煎粉 1汤匙
100g Assam paste / 亚叁膏 100克
150ml water / 清水 150毫升
1 tsp sugar / 白糖 1茶匙
100g coconut milk / 椰浆 100克
Method
Preparation /准备工作
1. Pick the tender leaves from wild betel and finely chop.
摘选山栳叶的嫩叶,切碎。

2. Peel sweet potato and cut into dices.
番薯去皮,切丁。

3. Soak dried shrimps until soft.
浸泡虾米至软。

4. Mix Assam paste with water till dissolved.
亚叁膏和清水拌匀成汁。


Method /做法
1. Heat up 1 tbsp of oil in a wok, sauté spice paste and Belacan powder over medium heat until fragrant.
烧热1汤匙食油,以中火把香料糊和拉煎粉爆香。

2. Add all Ingredients to the wok and stir-fry for 5 minutes.
加入全部材料,翻炒5分钟。

3. Add Assam juice, sugar and coconut milk, cook for another 5 minutes before serving.
加入亚叁汁、糖和椰浆,继续煮约5 分钟。盛出即可。
