Ingredient and Portion
250g watermelon rind / 西瓜皮 250克
10g barley / 薏仁 10克
20g black-eyed pea / 眉豆 20克
2 slices ginger / 姜 2片
1 stalk spring onion / 青葱 1根
20g white-back black fungus / 白背木耳 20克
1 stalk corn / 玉米 1根
300g pork rib / 排骨 300克
2500ml water / 清水 2500毫升
Method
1. Remove the green skin and the red part from the watermelon rind leaving only the white part.
西瓜去绿皮、红肉,只取白肉部分使用。

2. Soak black fungus in water until soft, wash and set aside.
白背木耳用清水浸发,洗净备用。

3. Rinse the corn a few times, cut into pieces and set aside.
玉米重复清洗干净,切块备用。

4. Rinse the ginger and spring onion. Smash them and set aside.
葱姜洗干净,拍裂备用。

5. Bring some water to a boil, scald pork ribs in the hot water for 5 minutes. Drain and set aside.
煮热适量清水,放入排骨汆烫5分钟,洗净沥干备用。

6. Soak and rinse remaining Ingredients a few times. Drain and set aside.
其他所有材料浸洗数次,沥干备用。

7. Put all Ingredients with water in a pot. Bring to a boil over high heat for 5 minutes. Turn to low heat and simmer for 3 hours. Remove from heat and seasons with a pinch of salt. Serve.
锅中放入清水和所有材料,大火滚起水5分钟后转文火煲3小时,关火放些许盐调味即可。
