Ingredient and Portion
SERVES 4 / 4人份

4 tbsp oil / 油 4汤匙
1 tbsp minced garlic / 蒜蓉 1汤匙
200g asparagus, peeled and diced / 芦笋(削皮,切粒)200克
30g honshimeji mushrooms, trimmed and diced / 新鲜鸿禧菇 (修去根部,切粒)30克
200g crabmeat / 蟹肉 200克
850ml light chicken stock / 淡鸡高汤 850毫升
2 tbsp Vietnamese fish sauce / 越南鱼露 2汤匙
1/2 tsp coarse ground black pepper / 粗磨黑胡椒 1/2茶匙
some cornstarch (for thickening) / 玉米粉水(勾芡用) 适量
1 no egg, lightly beaten / 鸡蛋(稍微打散) 1个
some salmon roe / 三文鱼卵 适量
some dough fritters/yew char kway, toasted / 油条(切片,烤脆)1条
Method
1. Heat oil and sauté garlic till fragrant. Add in asparagus and mushrooms. Cook for a minute.
热油,爆香蒜蓉,加入芦笋和鸿禧菇,拌炒1分钟。

2. Add in crabmeat and chicken stock. Bring to a boil and simmer for 2 minutes. Season with fish sauce and pepper.
加入蟹肉和鸡汤,煮沸后转小火煮2分钟。以鱼露和黑胡椒粉调味。

3. Thicken soup with cornstarch and lace in beaten egg. Serve soup with dough fritters and a sprinkle of salmon roe.
加入玉米粉水勾芡后,倒入蛋液拌成蛋花。享用时,放炸油条片和三文鱼卵即可。
