Method /做法 1. Discard the innards of crabs and cut into halves, wash thoroughly and drain well. Trim prawns and leave the shells intact, rinse and drain well. 螃蟹去除内脏,切开2块,彻底洗净后沥干。大虾去须和脚(留壳),洗净沥干。
2. Scald scored squids in boiling water until they curl up. Remove and drain well. 切花刀的鲜鱿放进沸水中烫至卷起,取出沥干。
3. Fill a wok with half-full of oil, deep-fry crabs and prawns separately until cooked. Remove and set aside. 将1/2锅炸油烧热,分别放入螃蟹和虾炸熟, 取出待用。
4. Heat 3 tbsp of oil, add in sliced garlic, chopped chilli and Ingredients B and bring to a boil. Add in remaining Ingredients A and stir well. 烧热3汤匙油,放入蒜片、指天椒粒和材料B 煮沸,加入其余材料A拌匀。
5. Stir in Corn Flour Solution and serve. 拌入芡汁,盛起享用。
