Ingredient and Portion
Ingredients (A) / 材料 (A):
2 chicken carcasses (cleaned and chopped) / 鸡壳 2副(洗净斩件)
4 stalks lemongrass (crushed) / 香茅 4枝(拍烂)
8 bird’s eye chillies (smashed) / 指天椒 8条(拍烂)
5 shallots / 小葱头 5粒
3 cloves garlic / 蒜头 3瓣
2.5 litres water / 清水 2.5公升
Ingredients (B) Tied in a muslin bag / 材料 (B) 以布袋包扎:
1 tsp cumin seeds / 小茴香籽 1茶匙
10 cardamoms / 柚籽 10粒
2 star anise / 八角 2粒
5 cm cinnamon stick / 桂皮 5公分
1 tsp coriander seeds / 芫荽籽 1茶匙
5 cloves / 丁香 5粒
Ingredients (C) / 材料 (C):
2 chicken whole legs (cut into bite-sized pieces) / 鸡全腿 2只(斩件)
some blanched rice vermicelli / 烫米粉 适量
Spices / 香料:
10g ginger / 姜10克
15g galangal / 蓝姜 15克
5 shallots / 小葱头 5粒
3 pips garlic / 蒜头 3粒
1 tsp white peppercorns / 胡椒粒 1茶匙
25g onions (chopped) / 大葱 25克(剁碎)
Seasoning
Seasoning / 调味料:
1 tbsp sugar / 白糖 1汤匙
1/2 tsp salt / 盐 1/2茶匙
1 tbsp chicken stock powder / 鸡粉 1汤匙
2 tbsp fish sauce / 鱼露 2汤匙
1 tbsp tom yam paste / 东炎酱 1汤匙
Garnishing / 装饰:
1 tbsp coriander leaves / 芫荽叶 1汤匙
some crispy shallot crisps / 油葱 少许
some shredded lettuce / 生菜丝 少许
some cherry tomatoes (halved) / 小番茄 少许(剖开)
1-2 limes(cut into half) / 酸柑 1-2粒(切开)
Method
1. Combine ingredients A and B in a pot, bring to a boil then simmer for 30-35 minutes. Strain the stock.
把材料A和B放入煲里煮滚,然后转小火,焖煮30-35分钟。
2. Put spices ingredients into a food processor and blend into a smooth paste.
与此同时,把香料放入搅拌器研磨至细。
3. Add the prepared paste into the soup stock. Simmer over medium low heat for 15 minutes.
把香料加入汤里,小火焖煮15分钟。
