1. Marinate the pork ribs for 1 hour. Coat the marinated ribs with egg and corn flour before deep-frying until golden brown. Drain the ribs after deep-frying and set aside. 排骨用腌料腌1小时。腌好后裹上鸡蛋液,接着裹上玉米粉,然后放入热油里炸至金黄色。沥干油,备用。
2. For the Sauce, heat a wok with some oil, then stir-fry the ginger, garlic, shallots and chilli until fragrant. 锅子内再烧热一些油。爆香酱料的姜、蒜、小葱头和辣椒。
3. Add in the stock and salt, sugar and vinegar. Taste and adjust the seasonings. 加入高汤,然后加入盐、糖和醋。试味。
4. Add in the pork ribs, and thicken the sauce with some cornstarch solution. Toss well. 加入排骨,用一些玉米粉水勾芡,和排骨一起拌均匀。
5. Sprinkle with some chopped chilli on top. Serve. 撒上一些辣椒丁即可。
