Ingredient and Portion
Ingredients / 材料
500g pork rib / 排骨 500克
1 egg / 鸡蛋 1个
1 tbsp corn flour / 玉米粉 1汤匙

Marinade / 腌料
30g chopped ginger / 姜茸 30克
20g chopped garlic / 蒜茸 20克
30g chopped shallot / 小葱茸 30克
1/2 tsp salt / 盐 1/2茶匙

Sauce / 酱料
60g stock / 高汤 60克
10g chopped ginger / 姜茸 10克
10g chopped garlic / 蒜茸 10克
10g chopped shallot / 小葱头茸 10克
10 chopped chilli / 辣椒 10条(切碎)
80g white vinegar / 白醋 80克
120g sugar / 糖 120克
1/2 tsp salt / 盐 1/2茶匙
Some cornstarch / 玉米粉 少许
Method
1. Marinate the pork ribs for 1 hour. Coat the marinated ribs with egg and corn flour before deep-frying until golden brown. Drain the ribs after deep-frying and set aside.
排骨用腌料腌1小时。腌好后裹上鸡蛋液,接着裹上玉米粉,然后放入热油里炸至金黄色。沥干油,备用。

2. For the Sauce, heat a wok with some oil, then stir-fry the ginger, garlic, shallots and chilli until fragrant.
锅子内再烧热一些油。爆香酱料的姜、蒜、小葱头和辣椒。

3. Add in the stock and salt, sugar and vinegar. Taste and adjust the seasonings.
加入高汤,然后加入盐、糖和醋。试味。

4. Add in the pork ribs, and thicken the sauce with some cornstarch solution. Toss well.
加入排骨,用一些玉米粉水勾芡,和排骨一起拌均匀。

5. Sprinkle with some chopped chilli on top. Serve.
撒上一些辣椒丁即可。
