1. Marinade chicken with the ingredients for 1 hour, coat with frying powder and deep fry in hot oil till golden brown, drain. (pic 1-2) 将鸡肉加入腌料腌制1小时,炸前沾炸鸡粉放入热油中炸至金黄色,捞起沥干油备用。(图1-2)
2. Soak shredded cucumber and carrot in water together with salt and sugar for 5 minutes. 将红萝卜和青瓜丝加入少许盐和糖的清水浸泡5分钟。取出挤干水分,铺于盘上。
3. Cook all the sauce ingredients, thicken with starch, set aside.(pic 2) 将全部酱料搅拌均匀,煮成芡汁。
4. Heat 2 tbsp oil in wok, saute garlic till fragrant, add in big onion, longan, tomatoes cube and spring onion. (pic 3) 锅中留油大约2大匙,爆香蒜米,加入大葱、龙眼、番茄粒及葱段炒匀。(图3)
5. Pour in prefried chicken and sauce, stir well and serve. (pic 4) 最后,加入炸鸡块和酱汁一起拌匀即可。(图4)
