Ingredient and Portion
【Ingredients / 材料】
450g chicken whole leg(cut small pieces) 鸡腿肉450克(切小块)
2 tbsp frying powder 炸鸡粉2大匙
1 tsp chopped garlic 蒜茸1茶匙
1/2 canned Longan in syrub 罐头龙眼1/2 罐
1 big onion 大洋葱1粒
2 stalk spring onion(cut block) 青葱 2条(切段)
2 tomatoes(cut small cube) 番茄 2粒(切粒)
1 cucumber(shredded) 青瓜1条(切丝)
1 carrot (shredded) 红萝卜1条(切丝)
red chili for garnishing (shredded) 红辣椒丝少许 (装饰用)

【Marinate Ingredients / 腌料】
1 tbsp soy sauce 生抽 1大匙
1 tsp sesame oil 麻油1茶匙
1 tsp concentrated chicken stock 浓缩鸡精素1小匙
1/2 tsp salt 盐1/2 茶匙
dash of pepper to taste 胡椒粉少许
1 egg 鸡蛋 1 粒

【Sauce Ingredients / 酱料】
1 tsp concentrated chicken stock 浓缩鸡精素1小匙
5 tbsp water 清水 5汤匙
2 tbsp sugar 糖2汤匙
3 tbsp tomato sauce 番茄酱3汤匙
2 tbsp plum sauce 酸梅酱2汤匙
1 1/2 tbsp chili sauce 辣椒酱1 1/2 汤匙
1 tsp sesame oil 麻油1茶匙
1 tbsp lemon juice 柠檬汁1汤匙
1 tbsp corn flour 粟粉1大匙
Method
1. Marinade chicken with the ingredients for 1 hour, coat with frying powder and deep fry in hot oil till golden brown, drain. (pic 1-2)
将鸡肉加入腌料腌制1小时,炸前沾炸鸡粉放入热油中炸至金黄色,捞起沥干油备用。(图1-2)

2. Soak shredded cucumber and carrot in water together with salt and sugar for 5 minutes.
将红萝卜和青瓜丝加入少许盐和糖的清水浸泡5分钟。取出挤干水分,铺于盘上。

3. Cook all the sauce ingredients, thicken with starch, set aside.(pic 2)
将全部酱料搅拌均匀,煮成芡汁。

4. Heat 2 tbsp oil in wok, saute garlic till fragrant, add in big onion, longan, tomatoes cube and spring onion. (pic 3)
锅中留油大约2大匙,爆香蒜米,加入大葱、龙眼、番茄粒及葱段炒匀。(图3)

5. Pour in prefried chicken and sauce, stir well and serve. (pic 4)
最后,加入炸鸡块和酱汁一起拌匀即可。(图4)
