1. Peel hairy gourd and cut into 3cm thick ring, seeded and leave empty hole in the middle; coat with some tapioca flour. (pic 1-2) 将节瓜去皮,切3cm圆段,再去籽,中间挖洞,涂上少许薯粉待用。(图1-2)
2. Peel fresh Huai Shan and grate into puree; mash bean curd and mixes all with seasoning. (pic 3) 山药去皮磨成泥状,豆干压成泥,放入大碗加入调味料拌匀待用。(图3)
3. Chop fresh mushroom, mock ham and mock salted fish finely; saute with some oil until fragrant; then mix in mashed ingredients, stuff into the hairy gourd and steam in high heat for 15-20 minutes. Pour sauce over and garnish with coriander. (pic 4-5) 把鲜冬菇、素火腿、素梅香咸鱼切末,烧热镬用少许油炒至香盛起,加入山药、豆腐泥中搅拌均匀,酿入节瓜内,然后排放蒸盘上,入蒸镬以大火蒸15-20分钟,取出淋上汁料,用芫茜装饰上桌享用。(图4)
