爆炒姜葱回锅腩食谱,不同于一般在中餐餐厅里吃的。所谓回锅腩就是五花肉,放入锅内用大火爆炒一番。然后加入姜葱和其他调味料即可。
Ingredient and Portion
300g pork belly (cooked and sliced) / 300克 煮熟五花肉(切薄片)
50g ginger slices / 50克 姜片
100g spring onion (sectioned) / 100克 青葱(切段)
60g fresh leek (sliced) / 60克 大蒜/京蒜(切片)
1/2 tbsp salted bean paste / 1/2大匙 豆酱
1 tbsp salted black beans / 1大匙 豆豉
1 tsp chopped garlic / 1小匙 蒜茸
50ml water / 50毫升 清水
1 tbsp "Shaoxing" wine / 1大匙 绍兴酒
Seasoning
1 tbsp oyster sauce / 1大匙 蚝油
1/2 tbsp light soy sauce / 1/2大匙 酱油
1/2 tsp sugar / 1/2小匙 糖
1 tsp chicken stock powder / 1小匙 鸡精粉
1/2 tsp pepper / 1/2小匙 胡椒粉
Method
1. Heat up 2 tbsp oil in a preheated wok to saute ginger and garlic over low heat until fragrant. Add the salted bean paste, salted black beans and pork belly slices, stirring constantly over high heat until well combined.
镬里烧热2大匙油以慢火爆香姜片和蒜茸,加入豆酱、豆豉和花肉片,改用大火翻炒片刻。

2. Add seasoning and water, bring to boil. Add in leek, stir-fry briskly until aromatic. Next, put in spring onion and "Shaoxing" wine, stir well. Serve hot.
加入调味料及清水煮沸,拌入大蒜略炒香浓,然后加上青葱和绍兴酒拌炒均匀,即可盛碟。
