1. Separately blend the dried chillies and dried shrimp in a food processor until fine, keep aside.
2. Heat cooking oil in a preheated wok, add in blended dried shrimp, and stir-fry over low heat until fragrant and golden in colour. Dish out and drain.
3. Leave hot oil in wok to saute shallot over low heat until aromatic and golden brown. Add in fried dried shrimp and dried chilli flakes, toss until the colour of chillies are deepens, and aromatic.
4. Add seasoning to taste, toss well, ready to serve.
