The best recipe that will give you a good appetite - stir fry dried chili flake with dried shrimp! It's really good to be eaten with any dish with warm white rice too!
这道虾米椒干食谱拿来炒菜或是配搭其他菜肴都是不错的。可说是这是百搭的虾米椒干酱料。
Ingredient and Portion
70g dried chillies / 70克 辣椒干
80g dried shrimp / 80克 虾米
50g shallot (chopped) / 50克 小葱头(剁茸)
100ml cooking oil / 100毫升食油
Seasoning
1 tbsp sugar / 1大匙 糖
1 tsp chicken stock powder / 1小匙 鸡精粉
1/2 tsp salt / 1/2小匙 盐
Method
1. Separately blend the dried chillies and dried shrimp in a food processor until fine, keep aside.
分别将辣椒干和虾米各自捣烂,备用。

2. Heat cooking oil in a preheated wok, add in blended dried shrimp, and stir-fry over low heat until fragrant and golden in colour. Dish out and drain.
镬里烧热食油,加入虾米松以慢火爆香呈金黄色,捞起,沥除油份。

3. Leave hot oil in wok to saute shallot over low heat until aromatic and golden brown. Add in fried dried shrimp and dried chilli flakes, toss until the colour of chillies are deepens, and aromatic.
镬里留下热油,加入小葱茸以慢火炒香至金黄色,加入已爆香的虾米松及辣椒末拌炒 均匀至辣椒末转成深色及香浓。

4. Add seasoning to taste, toss well, ready to serve.
加入调味料翻炒片刻,即可。
