Ingredient and Portion
250g crunchy pork (cut into pieces) / 250克 烧肉(剁块)
400g soaked brown squid (sliced) / 400克 水发鱿鱼(切片)
5 bird's eye chillies (diced) / 5条朝 天椒(切粒)
1 tbsp chopped garlic / 1大匙 蒜茸
1 tbsp cooking oil / 1大匙 食油
1 tbsp "Shaoxing" wine / 1大匙绍兴酒
some chopped spring onion / 少许 葱花
Seasoning
1 tbsp oyster sauce / 1大匙 蚝油
1/2 tbsp light soy sauce / 1/2大匙 酱油
1 tsp sugar 1 小匙 糖
1/2 tbsp dark soy sauce / 1/2大匙 黑酱油/老抽
Method
1. Blanch brown squid in boiling water, dish out and drain.
将鱿鱼放入沸水里以大火汆泡过 (焯水),捞起,沥干水份。

2. Heat cooking oil in wok over medium heat to fragrant the garlic and crunchy pork pieces. Add the brown squid with chillies and seasoning, toss over high heat. Splash in "Shaoxing" wine, remove from heat, and sprinkle with chopped spring onion. Serve.
镬里烧热食油,加入蒜茸和烧肉以中火炒香,放入鱿鱼、朝天椒和调味料,大火翻炒片刻。撒上绍兴酒,盛起,撒上葱花即可。
