Ingredient and Portion
Ingredients A 材料A:
500g eggplant, cut into strips / 茄子(切条) 500克
1 tbsp chopped garlic / 蒜蓉 1汤匙
100g minced pork / 肉碎100克
100g salted fish, diced / 咸鱼(切粒)100克
50g dried shrimp, soaked and drained / 虾米(浸软,沥干)50克
1/2 tbsp soybean paste / 豆酱1/2汤匙

Ingredients B 材料B:
2 red chillies, thinly sliced / 红辣椒(切幼)2条
5 bird’s eye chillies, thinly sliced / 指天椒(切幼)5条

Seasoning 调味料:
1/2 tsp pepper / 胡椒粉 1/2茶匙
1 tsp sugar / 糖1茶匙
1 tbsp light soy sauce / 生抽1汤匙
some salt (to taste) / 盐(调味)适量
1. Heat 3 tbsp of oil in a wok, add in eggplant strips and stir-fry for about 3 minutes, remove and set aside.

2. bAdd chopped garlic and minced pork to the same wok, stir-fry until fragrant. Dish up and set aside.

3. Add in remaining Ingredients A, eggplant strips, Seasoning and ½ bowl of water, stir-fry until cooked. Add in mixture from Method 2 and Ingredients B, stir-fry evenly. Dish up and serve.
Blanch the eggplant in boiling water immediately after cutting, then drain and set aside. Ensure every piece of eggplant is fully submerged in the boiling water to keep it from oxidising and turning brown.
