Tips
Blanch the eggplant in boiling water immediately after cutting, then drain and set aside. Ensure every piece of eggplant is fully submerged in the boiling water to keep it from oxidising and turning brown. 切好的茄子马上放入沸水中汆烫,然后捞起备用。确保茄子是完全浸入沸水中,否则接触空气后会氧化变色。
