Ingredient and Portion
150g asparagus (cut into sections) / 芦笋 150克(切段)
250g roast duck breast (store bought, bones removed and cut into strips ) / 烧鸭胸肉 250克(现买去骨切条)
2 cloves garlic / 蒜头 2瓣
2 cm young ginger (sliced) / 嫩姜 2公分(切片)
1 red chili (seeds removed and cut into small triangles) / 红辣椒 1条(去籽滚刀切)
1 tbsp sesame oil / 麻油 1汤匙
1 tsp Shao Hsing wine / 花雕酒 1茶匙
Seasoning
1/2 tsp sugar or to taste / 白糖 1/2茶匙
1 tsp fish sauce / 鱼露 1茶匙
a pinch of salt / 盐 1小撮
1/4 tsp pepper / 胡椒粉 1/4茶匙
1-2 tbsp water / 清水 1-2汤匙
Method
1. Scald asparagus sections in hot oil for 10 seconds.Remove and rinse in cold water. Drain and set aside.
用滚油拉芦笋10秒钟后冲冷水,滴干。

2. Heat sesame oil in a wok, sauté garlic and ginger briefly. Sprinkle in Shao Hsing wine to fragrant.
烧热麻油,把蒜头和姜爆香,然后濽入花雕酒。

3. Add asparagus,duck meat pieces and red chili. Stir-fry then mix in seasoning.
加入芦笋、鸭肉及红辣椒,炒均后加入调味料。

4. Toss and fry briskly over high heat. Stir well then dish out to serve.
大火快炒后盛出。
