Stewed squids with black pepper gives you yet another special texture when you bite on it! So flavorful and will be good as a main dish too.

Ingredient and Portion
2nos (500g) squid / 2条(500克)鱿鱼
6 shallots (chopped) / 6粒小葱头(剁茸)
4 garlic cloves (chopped) / 4粒蒜瓣(剁茸)
1 tsp black peppercorns (crushed) / 1小匙黑胡椒粒(拍碎)
1500ml water / 1500毫升清水

Seasoning/ 调味料:
1 tsp sugar / 1小匙糖
1 tsp monosodium glutamate / 1小匙味精素
1/2 tsp salt / 1/2小匙盐
1 tbsp MARMITE yeast extract / 1大匙妈蜜菜汁
2 tbsp cooking oil / 2大匙食油
1/2 tsp dark soy sauce / 1/2小匙黑酱油/ 晒油
Method
1. Remove the skin of the squids, rinse squids and blanch into boiling water for a moment. Remove, soak into ice-water immediately. Keep aside.
鱿鱼去衣,处理后洗净,用沸水汞烫一会,捞起马上浸泡冰水中,放置备用。

2. Heat up 3 tbsp oil to fragrant chopped shallots and chopped garlic, stir-fry until golden browned. Add in crushed black pepper, stir-fry until aromatic.
烧热3大匙油爆香小葱茸和蒜茸,炒至金黄色,加入黑胡椒末拌炒香浓。

3. Pour in water and seasoning, bring to a boil. Lower the heat, cook for about 20 minutes. Place in squids, continue stew for 10 minutes. Remove from heat. Soak the squids into the stock with covered for 10 minutes. Dish out and sliced. Serve with a little of stock.
注入清水和调味料同煮沸,改用慢火煮约20分钟,然后放入鱿鱼继续卤制10分钟,熄火,让鱿鱼浸泡卤汁中10分钟。取出,切片;淋上少许卤汁即可食用。
