(1) Blanch spare rib pieces in the boiling water, remove, rinse and drain well. 将排骨用沸水汆烫过,捞起,洗净后沥水备用。
(2) Blend all ingredients B in a blender till finely. Stir-fry the blended ingredients with 1 tbsp hot oil in the preheated wok at low heat until fragrant. Add in spare rib pieces, sugar and lemon juice, stirring for 5 minutes. 把所有材料(B)捣烂,然后在镬里以1大匙热油用慢火炒香,加入排骨、糖和柠檬汁兜炒5分钟。
(3) Add water, tomatoes and lemon’s rind, bring to a boil, simmer for 10 minutes. Remove, marinate for at least 2-3 hours. 加入清水,蕃茄和柠檬皮煮沸,焖煮10分钟,盛起,放置腌渍2-3小时。
(4) Mix marinated spare rib pieces with corn flour and Shaoxing wine, place on the steaming platter, steam it at high heat for 30 minutes. Serve hot. 将腌好的排骨加上粟粉和绍兴酒拌匀,上蒸盘,以大火蒸30分钟,即可食用。
