Ingredient and Portion
Ingredients (A) / 材料 (A):
400g spare ribs (cut into pieces) / 排骨/软骨 400克(剁块)
1/2 no lemon (squeezed, cut the rind into slices) / 柠檬 1/2个(挤汁,皮切片)
2 nos tomato (wedged) / 蕃茄 2个(切角)
200ml water / 清水 200毫升
1 tbsp corn flour / 粟粉 1大匙

Ingredients (B) / 材料 (B):
2 tbsp fermented salted black beans / 豆豉 2大匙
1 tbsp salted bean paste / 面豉/ 豆酱 1大匙
5 garlic cloves / 蒜瓣 5粒
2 shallots / 小葱头 2粒
2cm fresh ginger / 生姜 2公分
5 bird’s eye chilies / 朝天椒 5条
Seasoning
2 tbsp Shaoxing wine / 绍兴酒 2大匙
1 tsp sugar / 糖 1小匙
Method
(1) Blanch spare rib pieces in the boiling water, remove, rinse and drain well.
将排骨用沸水汆烫过,捞起,洗净后沥水备用。

(2) Blend all ingredients B in a blender till finely. Stir-fry the blended ingredients with 1 tbsp hot oil in the preheated wok at low heat until fragrant. Add in spare rib pieces, sugar and lemon juice, stirring for 5 minutes.
把所有材料(B)捣烂,然后在镬里以1大匙热油用慢火炒香,加入排骨、糖和柠檬汁兜炒5分钟。

(3) Add water, tomatoes and lemon’s rind, bring to a boil, simmer for 10 minutes. Remove, marinate for at least 2-3 hours.
加入清水,蕃茄和柠檬皮煮沸,焖煮10分钟,盛起,放置腌渍2-3小时。

(4) Mix marinated spare rib pieces with corn flour and Shaoxing wine, place on the steaming platter, steam it at high heat for 30 minutes. Serve hot.
将腌好的排骨加上粟粉和绍兴酒拌匀,上蒸盘,以大火蒸30分钟,即可食用。
