Preparation /准备工作 1. Briefly blanch scallops in boiling water and cool them under running water. Remove one side of the shell and use a spoon to scrape away the unwanted parts. Trim away the stomach of the scallop with a pair of scissors. 带子洗净,放入沸水稍微汆烫,然后放在水龙头下冲洗冷却。剥掉一边壳。用汤匙剔除圈在带子边的肠肚,用剪刀修剪整齐。
2. Soak glass noodles in water till soft. 粉丝浸水至软。
3. Peel and chop garlic. Remove seeds from chillis and chop them up. Chop preserved lettuce. 蒜头剥皮切碎。辣椒去籽切碎。腌菜心切碎。
Method /做法 1. Place some glass noodles on the shell, followed by a piece of scallop. Repeat the step for the remaining scallops. 粉丝放在带子壳上,然后把带子肉放在粉丝上面。重复完成其余带子。
2. Combine Ingredients B to form the Garlicky Chilli Sauce. 材料B拌匀成蒜椒酱。
3. Spoon the Garlicky Chilli Sauce onto the scallops and steam for 3 minutes till cooked. 用汤匙舀起蒜椒酱,放在带子上面。入锅蒸3分钟至熟。
4. Drizzle Seasoned Soya Sauce for Seafood over and serve. 淋上蒸鱼豉油即可。
