600g cod fish (clean and wash) / 银鳕鱼600克(洗净)

Sauce Ingredients / 酱料
2 pcs young ginger(smash & chopped) / 子姜2块(拍扁切碎)
3 pips garlic(chopped) / 蒜米3瓣(剁碎)
1⁄2 red chili(chopped) / 红辣椒1⁄2条 (剁碎)
1 stalk spring onion / 生葱1条(切粒)
Seasoning
A:
1 tsp chicken powder / 鸡精粉 1茶匙
1⁄2 tsp salt / 盐 1⁄2 茶匙
1⁄3 tsp sugar / 糖 1⁄3茶匙
1 tbsp Chinese Cooking Wine / 绍兴酒 1汤匙
1 tbsp water / 清水 1汤匙

B:
2 tbsp soy sauce / 生抽 2汤匙
2 tbsp hot water / 热水 2汤匙
Method
1. Combine all chopped sauce ingredients in a big bowl, add seasoning A to mix well.(pic 1-3)
把全部剁碎材料放进大碗,加入调味料A,混合均匀。(图1-3)

2. Mixes seasoning B in a small bowl, set aside.
将调味料 B混合搅拌均匀备用。

3. Arrange cod fish and sauce in steaming plate, steam in high heat for 8 minutes.(pic 4-5)
把处理好的银鳕鱼放在蒸盘,连同酱料放进蒸炉里盖好,用大火蒸8 分钟。(图4-5)

4. Dish out, sprinkle sauce ingredients and seasoning B over.(pic 6)
取出鳕鱼,淋上酱料及调味料,即可上桌。(图6)
