Splendour Wealth & Glory Recipe, a best Chinese cuisine recipe during the Chinese New Year!To make it better, pork trotter is used as ingredient to signify wealth and good luck in a new year.
1.Blanched pig trotter in a pot of boiling water, rinse and drain. 将猪前脚,放入沸水中川烫好,捞起洗净,沥干备用。
2.Heat 2 tbsp oil in wok, sauté ginger and garlic till fragrant.(pic 1-2) 镬内热2汤匙的油,爆香姜片及蒜米。图1-2)
3.Add in star anise, cinnamon, fennel and cloves, stir-fry until aromatic.(pic 3) 加入八角、桂皮、小茴香、丁香一齐炒香。(图3)
4.Toss in trotter, mushrooms and seasoning, stir to mix, and then pour in stock enough to cover the ingredients, bring to boil.(pic 4-7) 加入猪脚、香菇和调味料,炒均后注入上汤盖过面焖煮至滚。(图4-7)
5.Once boiled, simmer in low heat until trotter soften and gravy thicken. 转小火继续焖至猪脚软,汤汁浓稠即可上桌。
