Ingredient and Portion
2kg pig trotter (cut into pieces) / 猪前腿2公斤(斩小块)
10 pcs mushrooms (soaked) / 香菇10朵(浸软)
1 litre stock / 上汤1公升

Spices / 香料
1 whole garlic(peeled and chopped) / 蒜米1大粒(剁细)
1 star anise / 八角1粒
1 small piece cinnamon / 桂皮1小块
1 tsp fennel / 小茴香1小茶匙
5 pcs cloves / 丁香5小粒
10 slices ginger / 姜10小片
Seasoning
2 tbsp sesame oil / 麻油2汤匙
2 tbsp oyster sauce / 蚝油2汤匙
2 tsp pepper / 胡椒粉2茶匙
2 tbsp soy sauce / 生抽2汤匙
2 tbsp dark soy sauce / 黑晒油2汤匙
Method
1.Blanched pig trotter in a pot of boiling water, rinse and drain.
将猪前脚,放入沸水中川烫好,捞起洗净,沥干备用。

2.Heat 2 tbsp oil in wok, sauté ginger and garlic till fragrant.(pic 1-2)
镬内热2汤匙的油,爆香姜片及蒜米。图1-2)

3.Add in star anise, cinnamon, fennel and cloves, stir-fry until aromatic.(pic 3)
加入八角、桂皮、小茴香、丁香一齐炒香。(图3)

4.Toss in trotter, mushrooms and seasoning, stir to mix, and then pour in stock enough to cover the ingredients, bring to boil.(pic 4-7)
加入猪脚、香菇和调味料,炒均后注入上汤盖过面焖煮至滚。(图4-7)

5.Once boiled, simmer in low heat until trotter soften and gravy thicken.
转小火继续焖至猪脚软,汤汁浓稠即可上桌。
