Ingredient and Portion
Ingredients A / 材料A:
300g young lotus root / 嫩莲藕 300克

Ingredients B / 材料B:
20g mock dried shrimp / 素虾米 20克
1 tbsp curry powder / 咖喱粉 1大匙
1 tbsp sugar / 糖 1大匙
1 tsp soy sauce / 生抽 1茶匙

Ingredients C (grounded) / 材料C (搅烂) :
1 stalk lemongrass / 香茅 1支
4 dried chili / 辣椒干 4条
10g ginger / 姜 10克
some water / 水 适量

Garnishing / 装饰(切粒):
some chopped chili padi / 小辣椒适量
somecelery’s stem / 芹菜梗适量
Seasoning
1/2 tsp salt / 盐1/2 茶匙
1 tsp mushroom stock granule / 蘑菇味素 1茶匙
Method
1. Peel lotus root and cut into slices, soak in water for 15 minutes; drain.
将莲藕去皮切片后浸水15分钟,滤干水备用。

2. Wash mock dried shrimp and mixes with all ingredients B.
素虾米冲洗,滤干后拌入其余材料B腌入味,备用。

3. Heat some oil in wok, add in marinated mock dried shrimp mixture and saute in low heat until fragrant, dish out.
烧热适量油,加入腌入味的素虾米,慢火炒香上碟,备用。

4. Heat some oil in a clean wok and saute ingredients C until fragrant, toss in lotus root slices and seasoning; follow with mock dried shrimp mixture, stir to mix and dish out, sprinkle garnishing on top to serve.
用适量油爆香材料C,加入莲藕片炒香,加入调味料炒匀,再加入素虾米炒匀便可上碟,洒上装饰即可享用。
