Ingredient and Portion
1 chinese leek, thinly sliced / 1支大蒜,切丝
3 cm young ginger, julienne / 3cm嫩姜,榨汁
8 red bird's eye chillies, sliced / 8条鸟眼辣椒,切丝
Juice of 3 key limes / 3 茶匙 青柠汁
A sprig of coriander, sliced / 1束香菜,切丝
13 cloves of garlic, chopped / 13瓣蒜米,切碎
1 teaspoon sesame oil / 1茶匙麻油
1 tablespoon Thai Fish sauce / 1 汤匙 泰式 鱼露
1 teaspoon iodized salt / 1茶匙碘化食盐
1/2 teaspoon freshly ground white pepper / 1/2 茶匙现磨胡椒粉
1 stalk lemongrass, thinly sliced / 1颗香茅,切丝
800gm barramundi fillet, cubed / 800克 金目鲈块
Method
1. Mix lime juice, sesame oil, fish sauce, salt, white pepper in a bowl.
将青柠汁、麻油、雨露、盐、胡椒粉放入碗中。

2. Place fish in Oil-Less Fryer, add leeks, ginger, bird's eye chillies and lemongrass.
将鱼放入空气炸锅里,加入大蒜、姜、辣椒和香茅。

3. Pour lime juice mixture and cook for 20 minutes.
将青柠汁混合液倒入鱼中煮20分钟。

4. Sprinkle chopped coriander before serving.
当鱼煮好后放入香菜就可上桌了。
