1. Cut the eggplant into 8cm strips. Deep-fry the eggplant strips until golden brown. Drain and set aside. 茄子切成8公分的长条,然后炸至金黄色。沥干,备用。
2. Heat a wok with chilli oil to stir-fry minced pork and mushroom, then add in chopped ginger, garlic and chilli. Fry until fragrant. 锅子里烧热辣椒油,炒肉碎和冬菇丁。加入姜茸、蒜茸和辣椒,爆香。
3. Add in stock, eggplant and all the Seasonings. Braise for 1 minute. Thicken the sauce with some cornstarch solution. Sprinkle chopped spring onion on top and serve. 加入高汤、茄子和其余调味料,焖1分钟。然后以少许玉米粉水勾芡。撒上葱花即可。
